Chicken Hash Recipe

One of my favorite meals that can be prepared in a hurry is Chicken Hash. When I need to whip up something comforting and quick, this is a go-to dish.

Diced cooked chicken gives it protein, and the flavor comes from the sautéed onion and green bell pepper. Potatoes make it filling, but the health aspect comes from the two tablespoons of olive oil I use to sauté, as opposed to butter.

Olive oil is good for the heart. A splash of chicken broth keeps the chicken hash from drying out, and the garnish of fresh parsley makes it a pretty dish.

I serve it over rice with a side salad, and I am set for comfort and sustenance at lunchtime or dinnertime.

Instructions

1. In a large skillet, heat the olive oil over medium heat.

2. The diced potatoes should be added to the skillet and cooked, with occasional stirring, for about 10 minutes or until they begin to soften and brown slightly.

3. Add the chopped onion and diced green bell pepper, and cook until the onion is translucent, about 5 minutes.

4. Minced garlic should be added to the skillet and cooked for about 1 minute until fragrant.

5. Add the seasoned chicken to the bowl, together with the salt, black pepper, paprika, and thyme.

6. Add the chicken broth, and stir to combine all the components.

7. Medium heat is your friend here. You want to let the flavors mingle and intensify and the chicken broth to lessen and concentrate a bit.

8. Check the seasonings and adjust them as necessary.

9. Remove from heat once the hash is heated through and the potatoes are tender.

10. Before serving, drop some fresh parsley on top. Then, dig in and savor your tasty and filling chicken hash!
