I’m obsessed with Cilantro Lime Rice Instant Pot because it hits like a punch of bright, tangy rice that actually matters to dinner. I love how the fresh lime juice snaps against warm rice and how fresh cilantro sneaks in green, herbal trouble.

I crave that Copycat Chipotle Rice Instant Pot vibe on weeknights when I’m tired but not boring. I’d happily steal a forkful straight from the pot and call it dinner.

But no fluff. It’s about that garlicky hint and real citrus kick that wakes everything up.

Worth every messy, saucy bite.

Ingredients

  • Long grain rice: it’s the fluffy, neutral base that soaks up all the lime.
  • Water: it hydrates the rice, making each grain tender and pillowy.
  • Vegetable oil or butter: adds silkiness and helps keep grains separate.
  • Kosher salt: wakes up the flavors so it doesn’t taste flat.
  • Fresh lime juice: bright, tangy punch that cuts through any richness.
  • Lime zest: concentrated citrus pop, tiny but mighty for aroma.
  • Fresh cilantro: herbaceous, slightly citrusy; basically the fresh finish.
  • Garlic (optional): savory kick that gives cozy depth without stealing the show.
  • Unsalted butter (optional): makes it richer and more indulgent, in a good way.

Ingredient Quantities

  • 1 1/2 cups long grain white rice
  • 1 1/2 cups water
  • 1 tablespoon vegetable oil or butter
  • 1 teaspoon kosher salt
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 teaspoon lime zest
  • 1/2 cup fresh cilantro, finely chopped
  • 1 small garlic clove, minced (optional)
  • 1 tablespoon unsalted butter (optional, for richer flavor)

How to Make this

1. Rinse 1 1/2 cups long grain white rice under cold water until the water runs mostly clear to get rid of excess starch, then drain well.

2. Turn your Instant Pot to Sauté, add 1 tablespoon vegetable oil or butter and if you want extra flavor sauté 1 small minced garlic clove for about 30 seconds until fragrant, don’t let it burn.

3. Add the drained rice to the pot and stir for 30 seconds to coat the grains with the oil/butter.

4. Pour in 1 1/2 cups water and add 1 teaspoon kosher salt, give it a quick stir scraping any stuck bits off the bottom.

5. Cancel Sauté, lock the lid, set valve to Sealing and pressure cook on High for 4 minutes.

6. When the cook time ends, let the Instant Pot naturally release pressure for 10 minutes, then carefully move the valve to Venting to release any remaining pressure.

7. Open the lid, add 2 tablespoons fresh lime juice, 1 teaspoon lime zest, and 1 tablespoon unsalted butter if you want it richer. Let the residual heat melt the butter a minute.

8. Add 1/2 cup finely chopped fresh cilantro and gently fluff and fold the rice with a fork to evenly distribute the herbs and lime, taste and adjust salt or lime if needed.

9. Let the rice sit covered for 2 minutes to settle, then serve warm. Tip: for brighter cilantro flavor chop it right before adding and for fewer clumps fluff slowly so the rice stays light.

Equipment Needed

1. Instant Pot or electric pressure cooker with lid and sealing valve
2. 1 1/2 cup measuring cup (for rice and water)
3. Measuring spoons (teaspoon and tablespoon)
4. Fine mesh sieve or colander (to rinse and drain the rice)
5. Small bowl (to hold lime juice, zest and chopped cilantro)
6. Cutting board and sharp knife (for garlic, lime zest and chopping cilantro)
7. Wooden spoon or heatproof spatula (to sauté and scrape the bottom)
8. Fork (to gently fluff and fold in the cilantro and lime)

FAQ

BEST Instant Pot Cilantro Lime Rice Recipe! Substitutions and Variations

  • For 1 1/2 cups long grain white rice: use 1 1/2 cups Jasmine or Basmati rice. They cook the same in the Instant Pot and give a nicer aroma, just fluff gently when done.
  • For 1 1/2 cups water: swap with 1 1/2 cups low sodium chicken or vegetable broth for way more flavor, but cut the added salt a bit so it doesnt get too salty.
  • For 2 tablespoons fresh lime juice: use 2 tablespoons fresh lemon juice or 1 tablespoon rice vinegar plus 1 tablespoon water if you want a slightly different bright tang.
  • For 1/2 cup fresh cilantro: substitute 1/2 cup fresh flat leaf parsley or 2-3 sliced green onions if you or guests hate cilantro, it keeps the herb freshness without the soapy taste some people get.

Pro Tips

1. Rinse the rice well but don’t overdo it, stop when the water is mostly clear so you dont wash away too much starch or nutrients — this keeps the grains separate but still a little sticky if you like that.
2. Toast the rice briefly in the oil or butter before adding water, it gives a nuttier flavor and helps each grain stay separate, just 20 to 30 seconds is enough or the garlic will burn.
3. Let the pot sit sealed for the 10 minute natural release, dont be tempted to quick release early — that extra steam finishes the rice gently and keeps it from being gummy.
4. Add the lime juice and cilantro while the rice is still warm but not piping hot so the herbs stay bright and the lime stays fresh tasting, taste and adjust salt at the end because acidity can make food seem less salty than it really is.
